Beans with mushrooms (vegan)

Chop the spring onion into small pieces and poach with a dash of EVOO.

When the spring onions are poached, add the mushrooms. I used frozen mushrooms so as not to waste food, but any combination of mushrooms will do! Add a little salt and let them cook over low heat.

When they are ready, add a teaspoon of sweet paprika, a little cumin and basil and a couple of spoonfuls of crushed tomato.

Add the jar of faba beans (I pour a little water and drain it beforehand) and add about a glass of vegetable broth, depending on how brothy you prefer it.

Simmer for 5-10 minutes, let stand for a while to blend the flavors.
