Cut the chicken into medium pieces, put them in a bowl and add 2 tablespoons of soy sauce, lime juice and ginger. Mix well and marinate for about 30 minutes.

Take long chopsticks and assemble the skewers with the chicken pieces.

Put a frying pan on the heat with a little EVOO and cook the chicken skewers for 5 minutes on each side.

To make the satay sauce, put a saucepan on the heat and add the peanut cream, coconut milk, 2 tablespoons of soy sauce, ginger, grated garlic, lime juice and water. Stir with a whisk and cook for 5 minutes over low heat.

Serve the chicken skewers with the satay sauce. You can add a spicy touch with some chili flakes.
