📌INGREDIENTS. 🔺500g pasta of your choice. 🔺800g pumpkin (weighed with skin). 🔺1 can of coconut milk 🔺1 onion 🔺2 garlic cloves 🔺1 tablespoon dijon mustard 🔺2 tablespoons EVOO 🔺1/3 teaspoon of white pepper 🔺Salt

🔺Boil the pasta. 🔺Boil the pumpkin until tender and then mash it to a puree.

🔺Pour the EVOO in a frying pan and add the finely chopped onion and the grated garlic. Let them brown and add the salt and pepper. Then add the pumpkin puree, the mustard and finally the coconut milk. Let it cook until it has consumed 1/3 of the broth and has thickened a little.
