For 2 persons (8 arancini): We soak for 24h 150gr of chickpeas.

Cook the rice (1/2 cup) and meanwhile chop the onion and mushrooms.

Brown the onion and mushrooms and when they are ready, add the rice to the pan and mix well.

When everything is well mixed, add (to taste) the tomato sauce, grated cheese, oregano and basil.

Drain the chickpeas and chop them using a food processor.

With the rice mixture we will make small balls which we will dip in beaten egg and then we will coat them in the chopped chickpeas.

Preheat the oven to 200°.

When we have all the balls ready we will put them on a tray and with the help of a brush we will apply a little bit of AVOE (to make them golden brown) and we will put them in the oven. 15mim at 200° and 10min at 175°. And that's it! Enjoy!
