Preparación de la receta

First we peel the potatoes and cut them into small cubes. Do the same with the onion.

In a bowl, deep dish or salad bowl put only the onion, a drizzle of oil and stir well.

We cover it with a plate that completely covers our container and we put it in the microwave for about 3-4 minutes approximately (in case we do not like the omelet with onion, we skip this step😅).

Take it out, being careful not to burn it and add the potatoes, spice to taste (salt, garlic, pepper...), add another splash of oil and cover it again and put it in the microwave for another 7-8 minutes (also with the onion inside, it is not removed).

While the potatoes are cooking, in another bowl beat the three eggs and add parsley (it can also be done with oregano but to my taste, parsley gives it more flavor).

When the potatoes are done (very carefully again) add them to the egg and mix to combine.

Next, we grease a frying pan and add our egg, potato and onion mixture. We leave it over medium heat for 5-7 minutes (a little less if we like it juicy) we turn it over with a plate and leave it on the other side for the same amount of time.

I put a slice of cheese to melt on top, it is delicious🤤🧀🧀🧀🧀🧀🧀🤤🧀🧀🧀.
