Vegetarian pumpkin fritters in the air fryer

First cut the pumpkin, I used a medium one and then reduce its size a lot, so keep that in mind to measure how much you need.

Then put it in the air fryer with two chopped garlic cloves for 25-30 minutes at 175 degrees, stirring it every 5 minutes approximately. You can also do this step by putting them in the oven for half an hour.

You will know the pumpkin is ready when it falls apart by cutting it with a knife and fork. Crush it well, although you can also grind it with a food processor, and add EVOO, salt, and spices to taste. I have added basil and thyme.

I have made some with cheese and some without cheese to make them vegan. To continue with the vegan ones, add breadcrumbs to the mixture to give them consistency, and make little balls with your hands. If you want them with cheese, add a little grated cheese to the mixture, breadcrumbs, and make small balls. Inside add a small square of cheese (I used cheddar) cut as in the photo.

Then, roll the balls in breadcrumbs and put them in the air fryer. I put them in the air fryer for 10 minutes at 180 degrees and turned them over after 5 minutes.
