Spinach and goat cheese tartlets

First turn on the oven to preheat it to 180°. We will also take the butter out of the refrigerator to soften it .

In a frying pan put the oil and heat it. When the oil is hot, add the garlic cut into small pieces. Stir a few times and add the spinach and salt. Fry for a few minutes and set aside.

In the bowl where we have the butter add 100 ml of warm water, a pinch of salt and stir. Add the flour and knead. We must obtain a dough texture that does not stick to the fingers.

Divide the dough into 4 and divide into 4 tartlet pans.

Distribute the spinach that we have reserved before in the 4 molds.

In another bowl put the eggs and beat with a fork. Add salt and spices to taste (salt, nutmeg, pepper...). Stir and distribute in the molds.

Finally, place a slice of goat cheese on each tartlet.

Place the tartlets in the oven at 180° for 30 minutes.

Unmold and serve. This dish can be enjoyed either hot or cold. If we do not have tartlet molds we can use a single mold of about 20cm in diameter. In this case it may take a little more time.
