Salmon with leek sauce and potato and onion garnish

We make the garnish, I have taken small potatoes and onions. Wash and cut the potatoes in two, peel the onions and cut them in half. Put in a baking dish and add the chopped garlic, Provencal herbs, salt and EVOO.

Heat the oven to 200 degrees. When it reaches the temperature we lower it to 180 degrees. We put the potatoes 15 minutes, remove and stir and put 15 minutes more.

After this time put the salmon in the oven tray and put the garnish next to it. We put it in the oven again for about 10-15 minutes approximately.

To make the sauce put EVOO in a frying pan. Add the chopped leek, when it is golden brown add the chopped cashew nuts, stir and finally the cream. Lower the heat and let it cook for about 5 minutes, stirring from time to time. Season with salt and pepper to taste and pass it through the blender.

Once the salmon is done, serve with the garnish and the sauce on top.
