Peel the vegetables in thin strips, especially the zucchini, since it will be the substitute for the spaghetti.

Put a frying pan with a drizzle of oil over medium heat and add the carrots and peppers until slightly softened.

Then add the onion and leek. And put the chicken to marinate with a little soy sauce (I have also cut the chicken into strips).

Add the zucchini and the chicken and soy sauce and let them cook. Serve with a little tomato sauce for more flavor (I also added oregano).
