Chop the garlic and add a little EVOO and cayenne until golden brown.

Add the eggplant cut in small cubes until it is soft. Salt to taste.

Add the crushed tomato and mix. When everything is mixed, add the capers. And cover while we cook the pasta.

Cook the pasta (according to package directions). Take some of the pasta water and add it to the sauce to thicken it.

When it has reduced, add the grated Parmesan and let it integrate with all the ingredients.
