First we roast the eggplant, I did it grilled. Once roasted, I mashed it with a fork and added semi cheese (to my taste), when I put ingredients I put about 150 gr, you will see. We will put a beaten egg and I also added breadcrumbs, the amount is indicative, it has to be a manageable dough without being hard to make our balls.

Once they have boiled for a while and enough water has been consumed, we will proceed to add a beaten egg yolk with the juice of half a lemon and once we close it over our meatballs, we move it for a few seconds without letting the egg curdle and quickly remove it from the fire.
