First we roast the eggplant, I did it grilled. Once roasted, I mashed it with a fork and added semi cheese (to my taste), when I put ingredients I put about 150 gr, you will see. Once they have drained the excess oil, put them in a saucepan and cover them with tap water and a little salt.

Once they have boiled for a while and enough water has been consumed, we will proceed to add a beaten egg yolk with the juice of half a lemon and once we close it over our meatballs, we move it for a few seconds without letting the egg curdle and quickly remove it from the fire.

Be very careful when moving the meatballs so that they do not break and be careful not to curdle the yolk that we add to finish the sauce. The flavor is very special, with an acid point. You must like strong flavors. The meatball has a very special flavor rico👌🏼😋
