Chop all the vegetables and place them in a frying pan with EVOO in the following order: onion, peppers, zucchini and mushrooms.

When the vegetables are poached, add the Heura and wait for it to brown. You can add spices to taste: thyme, pepper and salt in my case.

We put the mixture in a tortilla and add some cheese.
