Preheat the oven to 180°. Wash well the sea bass, which has been defrosting for a few hours. Chop the bell pepper and the leek and put them in the base of the baking dish. Add a drizzle of oil beforehand so that it does not stick. We put it in the oven for about 10 minutes to cook a little more.

Meanwhile, in a separate bowl we put together: 5 tablespoons of olive oil, a clove of garlic cut into slices, the chives cut into pieces, a cayenne pepper (or two depending on the spiciness you want) and salt to taste. We put it in the microwave for 1 minute.

Remove the dish from the oven and place the sea bass on top. Pour the mixture we had in the microwave over the sea bass and the vegetables so that it stays with flavor. Little by little the vegetables will also get flavor while it is baking. Sprinkle the basil over the sea bass.

Put the sea bass in the oven for 30 minutes at 180°. When it is done, it is ready to eat! It is a unique and very complete dish.
