Microwave Carrot Cake

In a bowl, add the whole oat flour and baking powder to integrate them.

Add the ground almonds and integrate again.

Add one free-range egg to the mixture and then beat it.

Add EVOO, previously prepared date paste and cinnamon and stir.

Peel and grate the carrot and add it to the mixture.

Place the cup in the microwave and heat the mixture at maximum power for approximately 1 minute and 40 seconds.

Out of the microwave, let the resulting cake rest for a few minutes to be able to add the top layer or frosting.

While the cake is resting, prepare the frosting. To make it, mix the cream cheese and a splash of semi-skimmed milk.

Remove the cake from the cup and decorate the top with the frosting that we have previously prepared.

In addition, decorate with a walnut and a handful of berries (in my case, 2 blackberries and 1 raspberry).
