Scrambled eggs with mushrooms and shrimps

In a frying pan, with a splash of EVOO, brown the finely chopped garlic clove together with a little chopped parsley.

When the garlic begins to brown, add the mushrooms (varieties to taste), cleaned and chopped, and sauté for 4-5 minutes.

Add the prawns (if they are frozen you should defrost them beforehand), season with salt and pepper and stir for a few more minutes. Remove from the pan and set aside on a plate.

Beat the eggs in a bowl with salt, pepper and a splash of cream. In the frying pan, over low heat, add a little EVOO and pour the eggs; stir for a few moments and add the mushrooms and shrimp and let it cook over low heat, stirring constantly, until it has a juicy texture.

Serve on a plate and sprinkle with more chopped parsley.
