Wash the lentils.

The amount of paprika and salt are to taste. I personally add a little bit of spicy paprika because I like the touch it gives.

You always have the option of using a pressure cooker if you don't have time to cook them by hand.

If you want, apart from the carrot, you can add potato. As well as a little bit of diced Serrano ham. If you do not add the ham, or anything like that, it is a recipe that you can perfectly fit in your vegetarian diet.

If you like chorizo or blood sausage in the lentils, you can cook it at the same time as the rest of the ingredients. Or if you prefer, so as not to add fat to the stew, you can cook these in a small saucepan separately.
