Vegetable risotto with cheese

Peel and dice the onion, zucchini, bell bell pepper and tomato.

In a casserole with olive oil fry the vegetables for 5 minutes over medium heat. If it sticks add a little broth or water. Season everything to taste (salt, pepper, garlic/onion powder...).

Add the garlic and fry 5min more (make sure it does not burn).

Add the rice and stir for 1 minute to mix well with the vegetables.

Add the vegetable stock progressively, season to taste. The broth is added so that it looks like in the photo and when it evaporates, add more until the rice is cooked (about 15-20min). Cook covered over medium heat.

Serve and garnish with grated Parmesan.
