PUMPKIN WAFFLES 🍁. Ingredients for the batter (~5 waffles): 125g roasted pumpkin 125g oat milk 2 eggs 2 heaping teaspoons of butter (optional) 110g oat flour 1 teaspoon of yeast A pinch of salt Spices to taste (cinnamon, ginger...) Preparation: If you are lazy like me, make the pumpkin in the micro until soft with a drizzle of EVOO, but it is sweeter in the oven. Mix with a mixer first the pumpkin and the wet ingredients. When it is well added, introduce the dry ingredients and mix until there are no lumps. Let the dough rest at least 15 minutes in the fridge (you can leave it ready the night before). Preheat the waffle iron and cook (in my case 5-6min per batch, but it depends on your waffle iron). Cover the waffles with a cloth to prevent them from cooling. In my case I accompanied them with the rest of the leftover pumpkin, banana and 95% chocolate melted with a little oat milk. And a pinch of honey on top, what are we going to fool ourselves 😜.
