Preheat the oven to 175 °C (350 °F).

Grease a muffin tin with butter, or place paper muffin cups in the holes of the muffin tin to be used, keeping in mind that one serving equals two muffins.

Add the spring onions and bacon in each hole of the previously greased mold.

Beat the eggs with the salt and pepper. Add the cheese and mix.

Pour the mixture into the molds, on top of the spring onion and chorizo.

Bake for 15-20 minutes.
