Chop the onion and the zucchini and put them in a frying pan with olive oil. We wait for everything to poach together.

When the vegetables are soft, add a glass of flour and stir until slightly toasted. Then add two glasses of milk (previously heated). Stir until the mixture thickens. Optional: add grated Parmesan to the mixture.

When the mixture is thick (trick: when it separates from the bottom of the pan) put it on a plate to cool.

Once the mixture has cooled, we start making the shape of the croquettes. We coat them in flour, then egg and finally breadcrumbs.

We put them in the oven with heat up and down at 180° for half an hour. Tip: when they are done, put the gratin option to brown them and make them crispier.
