Take a baking dish and with the help of a knife open the breasts in half, in the form of small books. Fill with spinach, tomato slices and cheese inside. If you dare, add avocado! Close the booklet and pour a dash of EVOO on top.

Preheat the oven to 180° C with heat up and down. Once hot, place the breasts in the oven at 180°. The time will vary depending on how big your breasts are, the type of oven and if you use a fan or not. I had it about 45-50 minutes at 180°.
