The first thing to do is to cut the potatoes into medium squares. I do them in a bowl with a little oil in the microwave for about 8 minutes, or in a frying pan. Meanwhile we sauté in a pan the onion and three cloves of garlic chopped over medium-low heat. When browned, add the teaspoon of cumin, ginger and turmeric, and the chopped fresh coriander (or three teaspoons dry). Stir well.

Then add to the vegetables about five chopped tomatoes, or a can of crushed tomatoes. We raise the heat to medium-high and let them mix and thicken, about 5 min. Now we add the potatoes previously cooked in the pan, and if necessary a little vegetable broth and mix well. Leave for another 5 minutes. Finally, add the can of peas. If the peas are frozen, add them before with the potatoes and the broth so that they are cooked. Lower the heat and mix everything together and it is ready!
