Grind the coconut (you can use shredded coconut and skip this step).

Separate egg yolks and egg whites. First beat the egg whites and then add the egg yolks and continue beating.

Whisk together the ground coconut, eggs, oat flour and coconut water. Beat until a homogeneous dough is obtained.

Wet a napkin with EVOO and pass it through a frying pan so that the dough does not stick when it heats up. Turn the heat to medium-high and wait until the pancakes are done! 😋

To plate, put in one layer melted dark chocolate 85%, in another layer Greek yogurt and in the last layer grated coconut and some strawberries.
