Cut 3 cloves of garlic into slices. Cut onion and peppers into cubes or julienne.

In a frying pan, pour a splash of EVOO and set the heat on high. Add garlic, whole cayenne and diced ham while heating the fire.

When the garlic is starting to fry, lower to medium high heat. Once browned, add onion and bell pepper. Add salt and stir.

Fry for about 10 minutes at medium heat, 6/9 approx. Stir occasionally. Add the mushrooms and add salt again. Sprinkle a little cayenne powder and cumin powder.

Turn the heat up to medium high and stir from time to time. Once the mushrooms are soft, turn the heat up to high to give them the last touch and brown them a little. Be careful not to burn or stick to the pan.

Let stand 1 min and ready to eat!
