Chicken curry with rice mix

First of all, if I don't make this recipe for 5, what I do is freeze the leftovers. I do not freeze the rice, so I make just the right amount of rice, 100gr per person and the handful of tips, I only freeze the chicken with its sauce. The amount of rice that I have put is for 5 servings. On the other hand, you can leave the chicken more whole but we like it more shredded to mix it with the rice. Another day with the same chicken I can stuff pita bread or fajitas and this way it is also easier. Let's go with the recipe!

Chop the garlic, onions and mushrooms in a food processor. We put them to fry with the oil. Meanwhile we cut the kilo of chicken breasts into small pieces (in my case, small pieces). We add them to the frying pan and fry everything. When the chicken is done. Add the tomato and a little salt. We leave it covered for about 7-8 minutes so that it does not splash stirring from time to time.

After these minutes, add the can of coconut milk (400gr), 3 tablespoons of yellow curry (I have not tried it but if you like it spicy you can substitute half a tablespoon of yellow curry for half a tablespoon of red curry. We also add a teaspoon of turmeric, a little cumin and a little ginger powder. We put to boil the rice that this type of rice usually is in 17 min. While we remove it from the pan and it is the moment in which I with a wooden shovel I am crumbling the pieces of chicken (this as I have commented to you at the beginning is optional). We have it on medium heat about 17-18 minutes stirring from time to time.

And after these minutes you will have both things ready. You can serve it on top as I have done or one thing next to the other. For my taste it is good to eat it mixed, but for tastes the colors. I hope you like it. Let me know what you think. Enjoy your meal!
