First marinate the turkey for 20/30 min with the spices: salt, cumin, ginger, cinnamon, pepper, mint, oil and lemon juice.

In a frying pan, sear the turkey pieces, remove and add the onion, carrots, pumpkin and fried tomato. Turn a couple of times and place the turkey pieces on top, pour a glass of water in the bowl where the turkey was marinated and pour all the liquid into the pan, and let it cook over low heat for 30 minutes. Then add the 6 chopped dates and leave for another 15 minutes. If you see that there is not enough liquid, add a little more water.

Prepare the cous cous, a glass of water in a saucepan with the spices that you like, I use a salad seasoning sold in the market. Once it starts to boil add the cous cous, turn off the heat and let stand 5 min, then add a splash of oil and lemon zest.

When it has been cooking for 45 minutes, add the almonds and leave for another 15 minutes. Once the 15 minutes are up, just serve.
