Preparación de la receta

Quantities: 1 onion 1 large green bell pepper 1 large red bell pepper 1 zucchini 1 jar of crushed tomato Extra virgin olive oil Salt, pepper and oregano to taste

Chop all the vegetables (it is important that they are more or less the same size).

Cover the bottom of a pot with the oil and place over medium heat. When the oil is hot, first add the onion with a pinch of salt, until transparent.

When the onion is ready, add the red bell pepper and the green bell pepper and add a pinch of salt, so that all the vegetables are impregnated with salt. Let it cook for 5 minutes over medium heat.

Add the zucchini and add a pinch of salt.

When the vegetables are well poached, add the crushed tomato, pepper and oregano (to taste) and mix. Let it simmer until the tomato has reduced its juice, at least 45 minutes. The longer the better. (I leave it for about 2 hours)

I like to accompany the ratatouille with rice and fried egg, but that's up to each one ☺️
