Beat the egg whites until stiff. If you have Thermomix or Mambo you can set the egg whites at 7 minutes speed 4.

In a small bowl (it will have the shape of the muffin) Sift the oat flour and with encircling movements add the yeast. Do it slowly so that the mixture remains thick. Add the salt along with the yeast.

Microwave the whole mixture in the same container (it does not stick) for 3 minutes at medium-high temperature. Tip: Turn the bread over if it is wet, heat it another half minute upside down so that it loses moisture. You can toast it like a normal toast and it will be great.
