Pumpkin waffles 🎃 (savory)

The first thing to do is to cook the pumpkin. I have diced it in the Lekuè in the microwave, at medium power, about 12 minutes (two 6' to control).

Weigh 200 grams of cooked (or steamed) pumpkin and mash well.

Add the egg, a heaping tablespoon of cream cheese, a handful to taste of grated mozzarella and a tablespoon of EVOO oil. Beat well.

Add the spices. I put turmeric, nutmeg and a pinch of cinnamon. Add salt and pepper to taste.

In a bowl put the 200 gr of oat flour and half an envelope of baking powder and mix.

Mix everything together and stir well until a homogeneous mass is obtained.

When the waffle iron is hot, put the dough. With these quantities I had enough for 6 waffles.

Leave for a few minutes until ready. When you take them out you can put some grated mozzarella cheese on top to melt it.

Serve with the ingredients of your choice. I have put avocado and diced serrano ham on them. 🎃🧇🥑🥓
