Veal stew with mashed potatoes

Boil the potatoes in a saucepan, once they are cooked and warm, peel and mash them with a fork.

Peel and cut in small squares the garlic, onion, tomatoes and carrots (just chop them in circles).

Place oil in a pot and once hot, add the garlic and chopped onion. Once browned, add the apple cider vinegar, tomatoes, carrots, salt and pepper to taste; and, add the veal cut into squares. Add cumin and oregano. Keep stirring from time to time and lower the heat so that it cooks slowly (approx. 20 minutes) to prevent it from drying out or it will burn. If the juice is diminishing, add a little water.

In another pot, add oil and garlic. Once they are sautéed, add soy beverage and crushed potatoes. Stir and add a pinch of pepper and a pinch of oregano. Stir until you get the desired texture for the mashed potatoes.
