Cook the pumpkin in the microwave for 7 minutes. Meanwhile, hydrate the dates with a little warm water.

Wet ingredients: when the pumpkin is ready, mash together with the dates. Add the 2 eggs and 1 tablespoon of coconut oil and set aside.

Dry ingredients: grind the oat flakes into a fine flour. Add the yeast, 2 tablespoons of pure cocoa and salt.

In a bowl, mix the wet and dry ingredients until well blended.

Preheat the oven to 180°. Grease the molds with EVOO and bake for 20 minutes at 180° (check with a toothpick and when it comes out clean, they are done). Let cool on a wire rack.

For the frosting, melt a tablespoon of coconut oil in the microwave and mix with a tablespoon of pure cocoa. Stir until it becomes a liquid coating.

Place one side of the donuts on top of this topping and place back on the rack. For the toppings, sprinkle grated coconut and homemade peanut butter (you have the recipe in my profile) on top. Let cool and that's it!
