Heat a frying pan with a drizzle of EVOO while you cut the onion into julienne strips and the mushrooms into cubes. Over medium heat and covered, let it cook in the pan while you prepare the rest of the salad.

Prepare the salad with the cold ingredients. You can add more things like soy, bell pepper, any kind of cheese, cooked ham, tuna, boiled egg.... I used, in addition, diced blue cheese and a French omelet of one egg cut into strips.

Once the onion and mushroom are done, incorporate the prawns until they are sautéed and mix everything in the salad plate.

Dress with whatever you like: a classic vinegar and EVOO or make a sauce with half a natural yogurt, a spoonful of mustard, salt and pepper.
